Peru is the original home of the potato, central to the food of both Peru and Ireland. We source potatoes from the amazing range of heirloom varieties grown by David and Maria Flynn on Ballymakenny Farm. The fish we use in our ceviche is wild, locally landed fish, whenever the boats go out.
